Press Pause: Spicy Sausage and Veggie Bowl

This spicy sausage and veggie bowl is definitely one of my go-to’s every week. It’s easy to not get sick of it because I keep changing it up with different meats and vegetables. Sometimes I use okra, sometimes I add chicken. This recipe is as complicated or as simple as you’d like it to be. Perfect for when you are hungry, and you need to just get back to binge watching 30 Rock for the fourth time. Who’s doing that? Not me, shut up!

Ingredients
  1. Frozen Rice
  2. Andouille Sausage
  3. 1-2 tbsp olive oil
  4. Green Bell Pepper
  5. Cajun Seasoning (I use 3-4 sprinkles throughout)
  6. Can of french-style green beans
  7. optional: asparagus
  8. optional: okra
Instructions
  1. Prepare your bell pepper by washing and dicing it up
  2. Heat up olive oil in a frying pan
  3. Add bell pepper to hot pan and a few sprinkles of cajun seasoning
  4. Let bell pepper sauté for a few minutes until soft
  5. *optional: If you are adding okra or asparagus, add these ingredients after the bell pepper has sautéed. Once added, let your new vegetables sauté for a few minutes more, and add another sprinkle of cajun seasoning.
  6. Now is a good time to microwave your frozen rice according to the instructions on the packet.
  7. While your bell pepper is sautéing, dice up your andouille sausage. I prefer using Aidell's Andouille sausage, and I use all 4 sausages, so there is enough for leftovers.
  8. Add the sausage to your pan, and let brown for a couple of minutes.
  9. Open and drain your can of green beans.
  10. After sausage has browned a bit, add your green beans and stir into the mixture.
  11. Add another sprinkle of Cajun seasoning, and let cook, stirring occasionally for another 2 minutes.
  12. Serve over rice and top with a bit more Cajun seasoning, and some Louisiana hot sauce!
Notes
  1. Any frozen vegetables you use should be added before the sausage phase, so they have enough time to cook down and sauté.

    Girl, you are making me hungry. I need to get back to having “staple” recipes. I keep trying to be fancy and making new things every day on Pinterest, but it’s getting to be a bit much, I think.

      Haha, I know, I get hungry anytime I look back at any of these food posts! Oh, and I totally get that. I was working on a chicken a dumplings recipe a couple weeks ago, and we didn’t eat until like 9pm. I really should stick to what I know, hahaha!

    I am a fan of pretty much any kind of one bowl meal! This looks really good and would bring a whole new set of flavours into my menu routine. I love when recipes are super flexible too!

      Right! One bowl/pot/pan meals are my absolute favorites because I have such a disdain for doing dishes. Anytime I can throw it all together, I do! I hope you love this meal 🙂
